The ingredients needed to prepare Vegetable and lentil ragu:

  1. Take 3 sticks of celery.
  2. Use 2 of courgettes.
  3. Get 2 of peppers.
  4. You need 1 of aubergine.
  5. Get 1 of bulb fennel.
  6. Take 3 cloves of garlic.
  7. Get 2 of bay leaves.
  8. You need of Olive oil.
  9. Use of Salt and pepper.
  10. Prepare 2 of x 400g tinned chopped tomatoes.
  11. Take 200 ml of white wine.
  12. Prepare 1 of x 250g pouch beluga lentils.

Steps to make Vegetable and lentil ragu:

  1. Heat oven to 180c fan..
  2. Chop all the veg into 2 cm chunks, slice the garlic..
  3. Tip into a large baking dish, add the bay leaves, drizzle olive oil and season with salt and pepper. Roast in oven for 40 minutes..
  4. Add wine and tomatoes, mix well and cook for another 40 minutes..
  5. Remove from oven and stir through the lentils.

Add the lentils, tomatoes and vegetable stock and bring to the boil. Using a fork mash the tomatoes so they break down slightly. A healthy and versatile vegetable ragu that is full of flavor!
